Instructions
Score the small pompano, then season it generously with sea salt and freshly ground black pepper. Make sure to rub the seasoning into the creases and inside the fish for maximum flavor.
Pat the fish dry with a paper towel to avoid heavy splattering when frying.
Prepare a wok or deep-frying pan with enough oil for deep frying and heat it to 180°C.
Gently place the fish into the hot oil and cook for about 7 minutes on each side, or until golden brown and crispy.
Remove the fish from the wok, drain the excess oil, and place it on a serving platter.
